My mother had this recipe since I was a kid. I remember her making this for company or family gatherings. I also vividly remember the amazing aroma it filled the house with.
I remembered these Swedish Meatballs while looking for something to bring to a dinner party.
So here it is. So glad this recipe was recovered from so many years ago.
Ingredients
Meatballs
1-1/2 lbs ground pork
1 tsp salt
1 dash pepper
1/2 cup chopped onion
1/2 tsp ground ginger
1 beaten egg
Make meatballs about 1-1/2 inches in diameter. Brown in 2 tbsp butter for about 10 mintues. Drain on paper towel.
Sauce
1/2 cup chopped onion
1 cup chopped celery
1 10 oz can cosomme soup
2 tbsp corn starch
2 tbsp white sugar
1/4 tsp ground ginger
1/2 cup white vinegar
1/4 tbsp soy sauce
1 cup canned sliced peaches (in syrup) drained (save juice)
1/2 cup peach juice
Preparation
Leave 1 tbsp fat in the pan, sautee celery & onion. Add the rest of the ingredients except the peaches.
Stir until thick and clear. Remove from heat and pour into a 2 quart casserole dish. Add the meatballs. Mix
Place peaches on top and mix slightly, keeping peaches on top.
Bake uncovered at 325 F for 40 minutes.
