Nothing thrilled me more than finding a low carb version of rice pudding.
There are a lot of versions of cauli-rice pudding out there, but quite honestly, I stumbled on the perfect one the first time out.
It can’t get any simpler than this.
1 bag of cauli rice
1 cup heavy cream
1/4 cup Stevia
1/4 tsp cinnamon
1/4 tsp vanilla
(Sprinkle of nutmeg – optional)
In a pot over medium heat, combine rice, sweetener and cream.
Stir consistently until it thickens. You want the cream to reduce.
Remove from heat and stir in the cinnamon and vanilla, (and nutmeg if you’re using)
Dust with cinnamon and enjoy hot or cold.
I used a bag of Green giant Riced Cauliflower.
